- 160ml (2/3 cup) thickened cream
- 1 Streets Golden Gaytime ice-cream, softened slightly, sticks removed
- 2 tbs caramel sauce
- 4 Arnott's Malt 'O' Milk biscuits, finely crushed
- 60ml (1/4 cup) Baileys Original Irish Cream
- 2 tbs butterscotch schnapps
- 2 tbs vodka
- 8 ice cubes
Method
Show ingredient quantity- Step 1 Place thickened cream160ml (2/3 cup) thickened cream and ice-cream1 Streets Golden Gaytime ice-cream, softened slightly, sticks removed in a small saucepan. Heat over medium-low heat, stirring, until melted and well combined. Transfer to a jug and place in the fridge for 15 minutes to cool.
- Step 2 Meanwhile, place half the caramel sauce2 tbs caramel sauce in a small, shallow dish. Place half the biscuits4 Malt 'O' Milk biscuits, finely crushed in a separate dish. Dip the rim of 2 martini glasses, 1 at a time, in caramel sauce, then in the biscuit. Place glasses in the fridge for 10 minutes to set. Reserve remaining biscuit.
- Step 3 Pour , schnapps2 tbs butterscotch schnapps, vodka2 tbs vodka and remaining caramel sauce in a small jug and stir until well combined. Divide mixture between the prepared glasses.
- Step 4 Place the ice8 ice cubes in a cocktail shaker. Pour in ice-cream mixture then shake well until frothy.
- Step 5 Strain the ice-cream mixture over the martini mixture in prepared glasses. Top with reserved crushed biscuit. Top with the Gaytime Bites skewers. Serve immediately (see note).
