Mixed berry and vanilla compote

Ingredients (3)

  • 1/2 vanilla bean
  • 500g frozen mixed berries
  • 1/4 cup caster sugar

Method

  • Step 1 Halve vanilla bean lengthways. Scrape seeds from bean. Place berries, seeds, bean and sugar in a saucepan over low heat. Stir to combine.
  • Step 2 Cook, stirring occasionally, for 8 to 10 minutes or until berries have just softened. Remove from heat. Cool completely. Serve.
