Ingredients (8)
- 15 garlic cloves, peeled
- 250ml (1 cup) vegetable oil
- 2 tsp sea salt
- 1/2 tsp caster sugar
- 2 bunches winter greens (such as kale or spinach) or wild greens
- Sea salt flakes, extra
- Freshly ground black pepper
- Juice of 1 lime
Method
- Step 1 Combine the garlic, oil, salt and sugar in a blender and purée until very creamy and light. Set aside.
- Step 2 Cut the greens into 15cm lengths, then steam until just tender. Season with extra salt and the pepper, then squeeze over the lime juice. Drizzle over the garlic paste.
