Ingredients (7)

  • 1.8kg Coles RSPCA approved whole chicken
  • 1 tbsp Masterfoods perfect for chicken with lemon, roast garlic & oregano
  • 1/4 cup flat-leaf parsley, chopped, plus extra to serve
  • 2 lemons, quartered
  • 1 red capsicum, quartered, seeded
  • 2 red onion, peeled and quartered
  • 850g frozen McCain Italian herb mini roasts

Method

  • Step 1 Preheat oven to 180°C or 160°C fan. Unwrap chicken and sprinkle with the herb mix. Place in a baking dish and stuff the cavity with the parsley and half the lemon. Roast for 40 mins. Add the capsicum, onion, and remaining lemon to the dish. Roast for a further 40 mins or until the juices run clear when tested in the thickest part of the leg. Cover loosely with foil and set aside to rest.
  • Step 2 Arrange potatoes in a single layer in a baking tray and roast following packet directions. Sprinkle with parsley and serve with the chicken and pan juices.
